Hello, Fall! To match the cooler weather, here are some of my favorite cozy recipes to add to your Fall Baking Bucket List this season. From breads to cookies to cinnamon rolls, this list has it all. Enjoy and happy baking!
1. Zucchini Bread
Zucchini bread is an all-time favorite in my house during the fall. Served with a thick shmear of cream cheese, this bread is one of the only baked goods that my family consistently consumes and actually finishes all of.
We’ve been using this Mom’s Zucchini Bread Recipe from AllRecipes for as long as I can remember. At one point, my mom used to prep the dry ingredients weeks ahead of baking because we ate it so often!
Enjoy for breakfast, dessert, or snack.
My Tips
- Don’t skimp on the zucchini! The recipe calls for 2 cups, and I usually use at least 2.5 – 3 cups of lightly packed zucchini. It adds more flavor and moisture.
- Swap half of the oil for apple sauce or apple butter to slightly reduce calories and add depth in flavor.
- Try making into mini loaves or muffins for easier sharing and consuming!
2. Pumpkin Spice Snickerdoodles
This is actually the first year I’ve made these cookies, but they were so delicious that I will definitely be adding to the fall baking bucket list for good. I used Cambrea Bakes’ recipe for Chewy Pumpkin Snickerdoodle Cookies. They were a little softer than I expected, but the flavor and browned butter were delicious.
I took a taste of the dough off my spoon after scooping and couldn’t put it down!
My Tips
- Plan ahead. These cookies are more time intensive then I prefer, since you have to let your butter cool and dry out your pumpkin. They were super delicious, so just be smart about time management!
3. Cinnamon Sugar Swirled Apple Bread
I am a huge apple fan, and there are tons of delicious recipes out there to try! My recent favorite has been this Cinnamon Sugar Swirled Apple Bread recipe from Half Baked Harvest, but sometimes I will switch it up with other recipes or swap ingredients. I love the cream cheese swirl, apple chunks, and cinnamon sugar in Half Baked Harvest’s recipe.
My Tips
- This bread is delicious in both mini and large loaf forms! Serve with honey butter for an extra decadent treat.
- When making to share or transport, I like to leave the cream cheese out to prevent spoilage. I made mini loaves for coworkers (without the cream cheese), and even after literally being transported across the country, the bread held up well and everyone loved.
- Half Baked Harvest’s recipe does call for ingredients that I do not always have in my house. This apple bread recipe from Julie Blanner just uses the baking basics and is a good alternative! I have combined this recipe with the Half Baked Harvest one – using the Julie Blanner recipe as the base and then adding cream cheese, apple chunks, and cinnamon sugar according to Half Baked Harvest.
4. Soft and Fluffy Cinnamon Rolls
Soft and fluffy cinnamon rolls are the ultimate comfort dessert! I’ve made a lot of different recipes, and this version from ambitious kitchen has been a recent favorite.
Yummy variations I’ve made include apple cinnamon rolls, pumpkin cinnamon rolls, or monkey bread.
My Tips
- As you might have seen elsewhere, pouring heavy cream over the rolls immediately before baking helps make them extra pillowy and soft! I usually eyeball it, and you’ll want to add 1/4 to 1/2 cup.
- If you’d like, add a squeeze of lemon juice and use vanilla bean paste in your cream cheese frosting! The lemon juice helps brighten the frosting, and the vanilla bean paste packs a stronger punch than classic extract.
- Take your cinnamon rolls out when just barely golden on top. The biggest mistake I’ve made is letting my rolls overbake! Baking time can vary, but I personally like to take them out for a more gooey dessert.
5. Golden Sweet Cornbread
For a savory fall baking option, cornbread is our go-to. As the weather gets cooler, cornbread is the perfect side to a hot bowl of chili or soup, and makes a great side for the Thanksgiving table.
The recipe my family has been using for as long as I can remember is this Golden Sweet Cornbread from Allrecipes (it’s better than the pictures look!). We have the recipe printed, and it is stained from years of baking and spillages.
My Tips
- Feel free to substitute the cornbread recipe, but the non-negotiable for me is the cast iron skillet! Heat your skillet over medium-high heat and melt at least 2 tbsp of butter. Pour your batter directly in the hot pan, and place in the oven immediately. This creates the most delicious and buttery crust!
