These coffee swirl cookies are a new favorite. I loosely followed this recipe from Sirus House, with a few changes to my personal preference. This post is a quick review – I will definitely be making these again!

What I loved about these coffee swirl cookies!
- I loved the coffee flavor swirled with a classic chocolate chip. The coffee is rich and a little bitter, balancing out the sweet classic cookie dough.
- These cookies smelled SO good. The house smelled delicious, from browning the butter to the final baking.
- No chill time. I am an impatient, late night baker and despise cookie chill time. I DID have to chill the butter for a few minutes, but otherwise I appreciated not having to chill my dough for hours.
My Adjustments
What I changed from the original recipe
- The Chocolate – I am not a huge white chocolate fan. I find it way too sweet for my personal preference. To replace, I used about 3/4 of a bar of dark chocolate in the coffee swirl dough. For the classic chocolate chip cookie dough, I reduced the amount of chocolate and used semi-sweet chocolate chips instead of milk chocolate bar bits.
- Cookie Size – I can never eat all the cookies I make! To make these cookies easier to share, I prefer to make smaller cookies. I used a medium sized scoop instead of a large one. I’m not sure why, but smaller cookies are always easier to share and disappear much faster!
Next Time
What I would change for next time
- I would probably increase the amount of instant coffee. I am a fan of rich, not too sweet cookies, and I think this would make them even more yummy.
- These cookies were definitely a little more time consuming than my usual. If in a rush, I would swap the base cookie recipe for a quicker one with melted butter (instead of browned butter that needs to cool). I would also do half and half of each dough, instead of scooping small bits until a full scoop. This won’t be as pretty, since there will be less swirl, but would be preferable for a quick batch.
Overall, this recipe was a yummy one and inspired me to develop my own cookie recipe and variations. Stay tuned for those recipes!
